I didn't know I was a fan of zucchini until it was in a loaf!
Ingredients:
1/2 cup canola oil
3 eggs
2 cups sugar
2-3 cups zucchini (shredded)
2 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
3 cups flour
1 cup walnuts or almonds (optional)
Instructions:
After you have peeled and grated your zucchini, use a towel to take away any unwanted moisture. If the grater left large zucchini pieces behind, you can leave it or just chop them up into finer pieces. Preheat the oven to 375 degrees.
In a large bowl, use a spatula mix together your eggs, oil, vanilla and sugar. Then add in your zucchini, mix well. Lastly add your dry ingredients in a little bit at a time until fully incorporated! Bake for 50-60 minutes.
Enjoy by itself or with almond butter, chocolate chips and your favorite crushed nuts!
