These pumpkin chocolate chip cookies live rent free in my belly. I mean could you blame me for making these over and over again?! I am obsessed with brown butter and I just knew they would go great in these pumpkin based cookies. I currently have a crazy long list of different styles of cookies I want to make. Ingredients: 1/4 cup brown butter (softened) 1/2 cup pumpkin puree 1/2 cup sugar 1/2 cup brown sugar 2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 tsp pumpkin pie spice 1 egg 2 cup flour - 1/2 cup at a time desired amount of chocolate chips Bake at 350 for 9 - 12 minutes Instructions: In a large bowl mix together brown butter and pumpkin puree until it has a smooth consistency. Next add in your sugars one at a time, followed by your baking powder, baking soda, salt and pumpkin pie spice. I used @traderjoes pumpkin pie spice, would definitely recommend it as a fall staple! After you add in your egg, it is time to add the flour, 1/2 cup at a time so the dough doesn't crumble. Lastly add in your desired amount of chocolate chips, I decided to use semi-sweet today!
Let the dough rest in the fridge while your oven reaches 350 degrees. On a baking sheet, line it with parchment paper and prepare your dough for baking. I did equal sized portions that ended up making about 18 cookies. Bake for 9 - 12 minutes or until the cookies are lightly brown on the top.
