Chocolate Peanut Butter Zucchini Bread

Ingredients:

1/2 cup canola oil

3 eggs

2 cups sugar

2-3 cups zucchini (shredded)

2 tsp. vanilla

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

3 cups flour

1/4 cup dark chocolate (melted)

1/2 cup peanut butter (melted)

*recipe makes 2 loafs*


 

Instructions:

After you have washed and grated your zucchini, use a towel to take away any unwanted moisture. If the grater left large zucchini pieces behind, you can leave it or just chop them up into finer pieces. Preheat the oven to 375 degrees.

In a large bowl, mix together your eggs, oil, vanilla and sugar. Then add in your zucchini and melted chocolate, mix well.

Lastly add your dry ingredients in a little bit at a time until fully incorporated! After you pour your batter into the loaf tins, add the melted peanut butter and swirl the batter around.

Bake for 50-60 minutes.
