Ingredients:
2 Tbsp. butter
2 Tbsp. sugar
2 Tbsp. applesauce
1/4 tsp. vanilla
2/3 cup of kodiak cakes pancake mix
1/8 tsp. baking powder
pinch of salt
swirl topping:
1/2 Tbsp. butter (soft)
1/4 tsp. cinnamon
1 Tbsp. brown sugar
Instructions:
1. in a microwave safe mug, melt 2 Tbs. butter for about 15 minutes and then add everything into the mug except the swirl topping mixture.
2. after you have your coffee cake mix together, in another bowl melt the butter, add in cinnamon and brown sugar. add the swirl topping to the top of the coffee cake mix and slightly mix in.
3. microwave on high for 50 - 80 seconds. In my microwave, I did 40 seconds, checked it and then did another 20 seconds.
this coffee cake comes out moist and hot! (sorry for the trigger word 😅) if you want the cake to be less buttery, just add 1 or 2 Tbsp. more of the pancake mix or don’t do the swirl mixture.
