Not your average BROOKIE COOKIE but here it is and it came out so fabulous. The chocolate chip outside was a great shell for the brownie inside. Now I want to try so many different stuffed cookies! 🍪
Ingredients:
chocolate chip cookie exterior-
12 Tbs butter (cold/chopped)
1/2 cup sugar
1/2 cup brown sugar
1 egg + 1 yolk
1 1/2 tsp. vanilla
2 1/2 cups all purpose flour
1/2 tsp. baking powder
1 tsp. salt
brownie interior-
1/4 cup butter (cold/chopped)
1/2 cup sugar
1/4 cup cocoa powder
2 eggs
2 tsp. vanilla
1 1/2 cup flour
1/2 tsp. baking powder
Instructions:
In separate bowls, combine the ingredients for the chocolate chip cookie and the brownie cookie. I always start by combining the butter with the sugars until all of the sugar grains are smoothly incorporated. The eggs next, lightly beat into the butter/sugar mixture. Then comes the "dry" ingredients - flour, baking powder, salt, etc. After both of the separate doughs are made, store them in the refrigerator for 30 minutes while the oven is preheating to 350 degrees.
After the dough is chilled and more malleable, form the chocolate chip dough into about a 4 inch ball and separate it in half. Get about a 1 inch ball of the brownie dough and place it in the middle of the chocolate chip dough. Pinch and seal the chocolate chip dough around the brownie dough.
Place the dough on a parchment lined baking sheet with a little bit of room so the dough can expand. Bake 4-5 cookies at a time for 13 - 15 minutes or until lightly golden on top. Let the cookies rest and cool on the baking sheet because they will continue to cook.
If all the cookies aren't gone by the end of the night, store in a sealed container for later!
