Mini Mango Chicken Tacos

Super easy instant pot shredded chicken, perfect for tacos. Added a quick mango salsa on top and sieges dairy yogurt... and wowza you got yourself a dang good taco.

 
 

Instant Pot Ingredients:

1 frozen chicken breast

1/2 red pepper

1/2 green pepper

1/2 yellow onion

1 tsp. onion salt

2 tsp. chile lime seasoning

1 tsp. cumin

1tsp. chili powder

2 cups of water

 
 

Instructions:

Cut the veggies and place all of the ingredients except for the mango salsa in the instant pot, cook on high pressure for 1 hour. Drain some of the water (I kept about 1/2 cup), shred chicken and place back into the pot.


Mango salsa:

1 ripe mango

desired amount of red pepper (chopped)

desired amount of onion (chopped)

1 tsp. chile lime seasoning

1 tsp. salt

1 tsp. garlic powder


I prefer to cook my corn tortillas in a pan with olive oil, just for a couple of minutes so they brown on each side. Then add the shredded chicken, the yogurt (replacement for sour cream), mango salsa and limes.
