Lemon Chicken

Ingredients:

chicken breast

1/4 onion

1/2 green pepper

coconut oil

lemon

garlic powder

onion powder

basil leaves

oregano leaves

salt and pepper

Trader Joe’s everyday seasoning

Trader Joe’s chile lime seasoning


Instructions:

1. On medium heat, add 2 tbs of coconut oil to sauté the onion and pepper. I like to squeeze lemon juice right into the pan - about 1/2 tbs.

2. While your onion and pepper heat up, mix seasonings - apply to chicken like a dry rub.

3. After your onions and pepper brown a little, add chicken to pan. Cook each side for 4-6 minutes, depending on the size of your chicken breasts.

4. Add sliced lemon to the top of your chicken breast. Then place on a lid to let it sit for another 5 minutes or so on low heat. This allows for the lemon to get soft and for the chicken to soak up all the yummy spices.

 
 

Tips & Tricks:

When preparing the chicken, I prefer to cut my chicken in half and then flatten it out so it cooks nice and evenly.
